I know the holidays are over but I sent this recipe (and the variations) to Mary Lee a couple of days ago and she suggested I post it here so here goes:
SNOWBALL CAKE
Here's the basic recipe (followed by my variations)
1 boxed cake mix (yellow, white or French Vanilla) 1large box of instant pudding (vanilla or French Vanilla) 1 8 oz tub of Cool Whip (vanilla or French Vanilla) 1 small can of crushed pineapple, drained. shredded coconut
Start with a white cake mix (or yellow or French Vanilla) I use Betty Crocker but any will work.
Mix and bake the cake as directed on the box then set aside to cool (about a hour or so) And use a 13 x 9 x 2 pan, preferrably glass.
Once the cake is cooled mix the pudding as directed then pour over the cooled cake.
Spread the drained pineapple over the the pudding.
Spread the Cool Whip over the pineapple then sprinkle coconut on the top to your liking and put in the refrigerator to set up. Eat when chilled.
There you have the basic recipe.
I've made it with French Vanilla cake, French Vanilla pudding and French Vanilla Cool Whip and it's delish.
Strawberry Snowball Cake:
I used a strawberry supreme cake mix, vanillla pudding, drained and thawed sliced frozen strawberries and strawberry Cool Whip topped with the coconut.
My idea for the chocolate one is to use chocolate cake, vanilla pudding, mini chocolate chips and cocolate Cool Whip with either crushed oreos, shaved chocolate or the coconut.

Oh good, I found it! I normally make this in the spring/summer but you could make it whenever. It is really good, and it's low-fat!! _______ Pineapple-Orange Sunshine Cake (from Prevention Magazine) Cake:1 box Moist Deluxe yellow cake mix 1/4 c. applesauce 4 eggs 1 can (11 oz.) mandarin oranges in light syrup Frosting:1 container (8 oz.) light whipped topping, thawed 1 pkg. (3.4 oz.) instant vanilla pudding mix 1 can (15.5 oz.) crushed pineapple in juice For the cake... Preheat oven to 350ยบ F. In a large bowl, stir together all cake ingredients until moist. Beat by hand for 2 minutes. Coat a 9 x 13-in. cake pan with nonstick spray. Pour batter into pan. Bake 30 to 40 minutes, or until a toothpick inserted in the middle comes out clean. Cool completely. For the frosting... In a large bowl, mix together all frosting ingredients until well blended. Spread over cake. Store in refrigerator. Serves 16. Per serving... Calories 212, Fat 3.6g (Sat. Fat 2.3g), Cholesterol 53mg, Fiber 0.3g, Protein 3.2g, Carbohydrates 40.6g, Sodium 293mg. (To improve on these numbers, you can substitute egg whites or Egg Beaters for the whole eggs.)

Joyce that cake recipe brings back memories. It used to be called pig pickin cake and I think had oil in place of the applesauce. I made it when I was visiting my boyfriend(now husband) in Toledo. We were invited to go to a party with his parents and I was baking this cake. When I went to get it out of the pan, it stuck and the layers broke. I was horrified but glued the layers back together with the icing. It was not a pretty sight. My motherinlaw deemed it delicious and asked the name of the recipe. I always hated the name and told her in my case I called it crash cake. unfortunately my baking skills have never improved much. It is a very refreshing cake especially in the summer.

OK TM cooks, I need suggestions or appetizer/party recipes. We are going to a tailgate for the Ohio State -Florida championship game( Go Bucks) and I am tired of making texmex dip, artichoke dip, spinach dip and crab spread. Anyone have any other ideas? The local grocer is selling gator meat(tastes like chicken???) but I can't bring myself to try it. Cammy will be rooting just as hard for her gators-what are you making? Mary Lee and Rhonda are rooting on USM on sunday!! Good luck to everyone in their team's bowl games(except Cammy-just this once ) A dessert recipe that is easy to eat at a crowded party would be fine. Thanks in advance.

Here's a recipe you will probably recognize. I call them chess squares, but I've seen the same recipe with dozens of names!
CHESS SQUARES
1 box yellow cake mix 1 stick oleo (softened) 1 egg 1 cup pecans and/or coconut
Mix well with fork and press into 9 x 13 pan. In mixing bowl put.... 1 box confectioner's sugar 2 eggs 1 8-oz. cream cheese
Beat together. Pour over first mixture. Bake at 350 for 35 to 40 minutes. ********************************************************* My cheese tidbits I posted earlier are great for parties. ********************************************************* DUMP CAKE
1 box yellow cake mix 1 can (20 oz.) crushed pineapplie 1 can (30 oz.) pie filling (blueberry, cherry, etc. ) ( I use blueberry) 1 cup chopped nuts 1 stick butter
Grease and flour 9 x 13-inch pan. Put ingredients in layers in this order: pineapple, pie filling, cake mix (dry) and nuts. Place pats of butter over top - do not stir. Bake at 350 for about 35 minutes or until lightly browned. ***************************************************** We have this at bunko alot! I'll keep looking for party recipes.

MaryBeth... you MUST make BUCKEYES!! LOL althought that is dessert... BUCKEYES 1 1/2 lbs confectioners' sugar 1 16 oz jar crunchy peanut butter 1 cup butter, softened 1 12 oz pkg semi-sweet chocolate chips 1 tablespoon Crisco or vegetable oil In the bowl of a food processor, add 1/2 the quantity of the butter, sugar, peanut butter. Process until well combined. Shape into 1 inch balls. Refrigerate. Repeat this process with remaining ingredients. In the top of a double boiler, combine Crisco or vegetable oil and chocolate, simmering and stirring until chocolate has melted. (If you don't have a double boiler, melt it in a small metal bowl over boiling water in a saucepan; alternatively, use a microwave). When melting chocolate, be careful not to allow any moisture to touch it (or steam), as this will cause the chocolate to seize and you'll have to start over! Dip each ball in chocolate until partially coated. Place on wax paper or silicone sheets. *********************************************** Here's one that my family makes that we eat up so fast she can't make them quick enough... but I'm not sure if others would think it's a weird Hor'deurve (sp? LOL) Vlasic COLD uncooked Kosher Dill Pickles Cream Cheese Ham lunch meat (large rectangular type is best) spread out the lunch meat... spread cream cheese on the lunch meat. Place the pickle on the meat and roll the ham around the pickle.. Then fasten the meat on the pickle with toothpicks (we use plastic ones)... Put toothpicks all down the pickle in bite size increments... then slice the pickle/meat in between the toothpics VOILA LOL they are AWESOME.. but I suppose you have to love pickles *************************************************** if you like spicy food... this is a great one for a "tailgate party"... do you have a grill? RumprocketsI don't know the recipe... but here's the gist... Jalepeno peppers chicken tenders bacon cream cheese Cut the end off of the pepper ... fill the pepper with cream cheese (or you can half the pepper and fill that part with cream cheese... wrap the chicken around the pepper. Wrap bacon around that.... and hold together with toothpick... then grill the "rocket" Ok... there's all I know LOL
